JAMBALAYA!


So, by the looks of this picture, my first try at Jambalaya looks pretty gross, but I promise it looked better in person! Don't worry, it tasted wonderful too haha. It was really spicy, but that is how Cajun food is supposed to be right!?

Okay, here is the recipe....

  • 1 tbsp veg. oil
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 package (12oz) spicy smoked pork or chicken sausage
  • 1 med. onion diced
  • 1 green bell pepper diced
  • 1 rib of celery, trimmed and diced
  • 1 1/2 tsp Cajun seasoning (I def. added more than this bc I don't measure out spices haha)
  • 1 (14oz) can Rotel drained
  • 1 cup long-grain white rice (I used a package of rice and beans) uncooked
  • 1 (15.5oz) light, low sodium chicken broth

1. Heat oil in large skillet over med-high heat. Add chicken and sausage and saute until chicken is no longer pink; about 4 min.

2. With slotted spoon, remove meat into a bowl. Reduce heat to med. and add onions, pepper, and celery. Cook veggies until crisp-tender; about 5 min. Stir in Cajun seasoning, tomatoes, and rice. Add broth.

3. Bring mixture to a simmer, then cover and reduce heat to med-low. Simmer 20 minutes, until almost all the liquid is absorbed. Stir chicken and sausage back into pan. Cook, uncovered, 5 min. until rice is tender.
