Quick Tex Mex Bake!

  • White or spanish rice
  • 1lb ground beef or grilled chicken. (I used ground chicken)
  • 4 cups crushed tortilla chips
  • Corn
  • 1 can diced tomatoes w/ green chiles (Rotel)
  • 1lb velveeta cheese cubed
  • Sour cream (optional)

1. Preheat oven to 350.

2. Prepare rice and meat then set aside. Spray 13x9 baking dish with cooking spray. In medium bowl combine rice, Rotel, and meat. Set aside.

3. Cover baking dish bottom with crushed chips. Layer half of the cubed cheese over the chips. Then add the rice/rotel/meat mixture. Top it off with the remaining cheese.

4. Baked uncovered for 15 min or until cheese is melted.

5. Top with sour cream of desired. This is really quick and easy and is good to serve with chips and salsa!
